Red Seafood Curry
1 Tbsp Sesame Oil ¼ C Red Curry Paste 2 C Coconut Milk 1 Tbsp Fish Sauce 1 Tbsp Sugar 2 Limes (juiced) 1 tsp Rice Wine Vinegar 1 Red Bell Pepper (diced) 4 oz Green Beans (rough chopped) 1 Mango (cubed) 3 cloves of Garlic (minced) 1 Tbsp Ginger (minced) 1 lb Cod (diced) 2 lbs Shrimp (peeled and deveined) • SAVE THE SHRIMP SHELLS! 4 C Vegetable Stock
1. In a medium sauce add vegetable stock and shrimp shells 2. Bring the stock to a boil and simmer until the shells have turned pink 3. Bring a large pot to a medium-high heat 4. Add sesame oil, garlic, and ginger 5. Sauté the ginger until the garlic has reached a golden-brown color 6. Add bell peppers and green beans and cook for 2 minutes 7. Add red curry paste and cook for another 2 minutes until fragrant 8. Add coconut milk, fish sauce, sugar, lime juice, rice wine vinegar, and hot shrimp stock 9. Bring to a simmer and add shrimp, cod, and mango 10. Simmer until the raw shrimp has cooked and serve
